New Year's Strata!


This last year may have been crazy, but we have the power to start this new one on a bright note! I love breakfast food…. more than anything ….so it makes sense to start the year with a delicious meal to share with family. #NewYearsWithEB


Egg Strata on Christmas morning is a long standing tradtiion in my family, so it just feels like a great one to share with my loved ones to start the new year. I’ve made a few substitutions to our traditional recipe to make it my own: I use Hash browns for the base instead of bread and Eggland’s Best Eggs over your everyday egg. EB is the #1 branded egg in the U.S. and is an excellent source of vitamins D, B12, E, B5, and riboflavin. New Year's Hash Brown Egg Strata


INGREDIENTS:

1/2 unsweetened coconut milk - or non-dairy milk of choice

10 - 12 Eggland’s Best Eggs

1 green pepper - diced

1 red pepper - diced

1 onion - diced

5 slices of Bacon - crumbled

4 cups hash browns (about half a bag of frozen hash browns)

2 Tbsps Ghee butter - or your choice of cooking oil.

Salt & Pepper

DIRECTIONS:

Preheat oven to 350. Grease a 9 x13 or large casserole dish. Lay bacon on pan and cook on low heat until perfectly brown. Place on paper towels/plate and set aside. Next, add 1/2 tbsp ghee to pan on medium/high heat. Add hash browns and cook until golden brown then spread on the bottom of your dish. Now add your diced peppers and onions to the pan and cook through. Add peppers, onions, and crumbled bacon to the potatoes. Whisk together eggs, milk, salt & pepper and pour over the rest of the ingredients in the dish. Bake for 30 + minutes - until center is cooked. Slice up and enjoy with your loved ones!
